Homemade Peanut Butter Cups

Mikey and I recently made the decision to switch to fair trade chocolate due to ethical reasons. (I’m not going to go into it, but you’d be surprised how unethical chocolate is…) Unfortunately it’s VERY difficult to find fair trade chocolate, especially peanut butter cups. So I decided to make some for him as an early birthday present. I found Sunspire chocolate at Wegmans, which is fair trade and used that to make them. They came out pretty well I think!

Here’s the total calories for the whole thing (warning, this is not for the faint of heart!):

2 bags of chocolate – 2380
3/4 cup peanut butter – 1517
1 cup confectioner sugar – 560
3 graham crackers – 195

Total for 25 peanut butter cups: 4652
Per peanut butter cup: 187

Here’s what I ate:

1 ate 1 peanut butter cup – 187
and I had about a serving of chocolate while I was making it – 70

Total: 257

So far: 1308

Ug, I asked for no sugar from Dunkin Donuts and got sugar. I was so tired I drank it anyway.

Pie Cupcake Thing

So basically… this thing is some kind of chocolate mousse pie thing with icing and bananas. My educated guess is somewhere between 1000-1200 calories. I still don’t know why I ate it. I was feeling kind of depressed and the next thing I know I’m at the cupcake shop. o.O

Winner Winner Chicken Dinner!

All we really had to make for dinner was chicken and I wanted to do something a bit different than I did the other night, so I looked up some recipes. I found a great one that I had almost all of the ingredients to make.

I didn’t have cider vinegar so the sauce came out a little bit sweeter than I think it should have, but it was still delicious.

Notes:
Wow! I didn’t think this meal would clock in under 500 calories since it included butter, oil and sugar. I actually felt guilty eating this, but there was no reason to!
